They are going to wriggle and squeak in fear. That is normal and okay. As long as you are only grabbing folds of skin and not bones or ears, you aren't going to hurt them. And honestly, even if you are hurting them, that's okay as long as you still get them the medicine and you don't cause any permanent damage.
Yes, this may set back the taming process a bit. But I've never managed to scare a mouse so badly that it never trusted me again. At this point your options are to either forcibly medicate your mice or don't and watch them die.

and yeah im definitely not used to handling ANY small animals so I'm afraid to hurt them

P.S. I just tried giving them baby food with no calcium as a way to trick them into eating it, but they do not seem to be eating it. oh well

Forget about tricking them into eating it. It's not safe anyway. What if one day you have a mouse dying of cancer who needs pain medications otherwise they will suffer immensely, and that mouse isn't eating or drinking because of the pain? You would either have to force medicate them, or they would suffer until they die. Count yourself lucky: you get to learn how to medicate a mouse now, when the stakes are not high and you have room for error. Then when you have a real emergency, you'll already be a pro. Trust me, I speak from experience: learning how to medicate early saved me a lot of grief when my mice had real emergencies. When I first got them, it took me half an hour just to grab one mouse to medicate her. A year later and I could speed-medicate four mice in just ten minutes, with each of them taking 2+ meds at once. Practice makes perfect.
