"Gingerbread" House? Maybe?

Maybe this could be a way to do a mouse-safe "gingerbread" house? With healthy, mouse-safe treats of course. Could also use cardboard instead of a wooden bird house, so if/when it gets yucky it's not big deal to chuck it.
The "glue" is pretty much the same recipe used in those bird seed ornaments I've made for the mice before, so I know it's safe as an occasional treat.
