Is a little apple sauce ok (No sugar added, just pure apple sauce)? Or would that be a no because of possible arsenic content... Not sure how the process is when the apples are being pressed into applesauce, but I would assume some seeds make it in.

Cashew nuts are safe as far as I know.
Not sure about bread, its not something I would think to feed to mice.

Cashews are safe. Stick to whole grain breads. Check ingredients. I have given my mice the occasional crust of rye bread. They liked it.

I missed this post. Sorry. I don't see why plain, unflavored, unsweetened applesauce wouldn't be ok. It's just cooked apples and apples are safe. If you're worried that seeds may have gotten in during the process, you could make your own. Or I imagine they'd be extra careful making jars of baby applesauce?

Does anyone know why iceberg lettuce is usually not recommended? Just curious. Also, any idea if beetroot leaves are safe?

Iceberg lettuce is just not as nutritious as darker varieties. It's not harmful, just not really worth giving.
I'm not sure about beetroot leaves.

Beet greens are high sodium.
Little mousie April would eat ALL greens, but I never gave her iceberg lettuce. It was rarely around, since I don't buy it -- because of its lack of nutrition and flavor.
During summer and into fall, watch the roadsides for lambsquarters / goosefoot. (Look online for pictures. They are easy to recognize.) I try to keep a garden bucket of them growing because they are delicious, including the fat stems and the seed heads. April agreed. How she LOVED lambsquarters! Just don't pick any that would have been sprayed or otherwise chemically treated, including perpetually inundated with automotive exhaust. If there are no pristine leaves, look for some opening seed pods and bring the seed heads home to start your own garden. They're popularly considered a weed, but I can certainly eat enough to keep them under control!!
