If she's a first time mom, mice often cull and eat their first litter cause they're not quite sure what to do with them. She's also in a new home, so that's a stressor as well. Uncontrolled pet store mouse breeding can yield stillborn or unwell babies that mother mice dispose of too.
It's quite likely that she decided to munch the kids.
Otherwise, I've heard of tumours or abscesses creating a pregnancy look, but neither of those would've disappeared so quickly. Constipation and gas derived bloat is also something I've seen mice experience.
If she's back to normal, just keep an eye on her to make sure it's not something that'll come back. I'm betting it's a case of baby munch, though.
