Try being more aggressive with his taming. Do a bathtub session. He'll soften up to you after he's gotten the chance to crawl all over you and see that you're friendly.

When you get him out of his tank, move him to a safe play area where you can interact with him more comfortably. The bath tub or a bin with toys for him to play with. Tubing him to move him is fine but just keeping him in one for the interaction may be too stressful at this point.

Ok, I will keep that in mind. We have an old empty bin I can clean up. I am not allowed to have mice in the bathtub, I asked that once and I got a look like this; Nah

Update on his behavior: He hasn't even nibbled since I blew on him a little bit that day. He looks really alert and stares down my hand when I set it in the tank, then if I move stuff around he will go crazy with the tail rattling. Once he's outside his territory though, he just acts like a normal scared mouse, trying to hide from me, he seems comfortable in my hand though.
