It's like 2:30 am where I am and I'm losing my mind. When ever I go shopping there is very little in small pets especially mice and rats.
The big shops near me are Pet stock Petbarn BestFriends Pets.
Do you know any websites that don't charge an arm and a leg for shipping?

For mixing, I've seen some people use this calculator online (http://tiny.cc/diecoz), and I assume it would work for mice mix calculations as well but as an average or standard what would your recommended percentages be for fat and fiber?

Yup, that would work. It basically just averages out the GA according to what percentages you put in.
The general recommendation is 12-14% protein (from my experience up to 15% has also worked), ~5% fat, and ~10% fiber. This would include a high quality pellet intended for rats/mice for a stable source of micronutrients and some sort of high variety seed mix.

Raw and cooked works, I imagine. I make my own food mix and it contains raw buckwheat, rice and flax seeds among other things and I haven't had any issues come up.

All of those are safe to feed raw.
