Should two mice have two different bowls or feeding times? How do I monitor their eating habits?

You should have food available for them 24/7, it doesn't make a huge difference if there's more than one bowl, but it may lesson the chance of them fighting over food. You could also scatter food around the cage for foraging, though it's even harder to monitor food intake if you do that.

And as long as no one seems lethargic or is losing weight, you should be alright! If you have concerns, you could always separate one of them for a little bit to monitor food individually.
